DOMAINE DE L'ANCIENNE MERCERIE

History

It is with much humility and dedication that Domaine L'Ancienne Mercerie, a rising star in Languedoc's, work organically (certified since 2009) the schist soils of the Faugères region. Established in an old building formerly used as a drapery factory, Nathalie et François Caumette work with a qualitative aim: maintenance of the traditional viticultural techniques on half of the vineyard (bush vines, stocks planted squared…) and installation of more modern techniques on other half of the vineyard (trained vine, spacing of the row of 2 meters). The interventions in the vineyard are minimal in order to not pack the soil. The vineyards are low yeilding producing between 20 and 25 hectoliters per hectare on average. In the cellar, the Caumettes work flexibly with the individual characteristics of each vintage, and only with indigenous yeasts. And with only a minimal use of S02, thus the wines are "alive" and will evolve in bottle.
