The Valtramigna lies in a very fortunate location in the eastern part of the province of Verona, just a few kilometers north of Soave. It is a predominantly agricultural area and the grapevine is one of its most successful crops. For this very reason the area is blessed with two wines of Controlled Denomination of Origin: the Soave and the Valpolicella. The Bennati Winery originated at the beginning of the century in such a highly favorable wine region and precisely in Cazzano di Tramigna. The production of the very prestigious local wines and especially the aging of the Amarone and the Recioto della Valpolicella wines were the only activities to which the company dedicated itself during its early inception. Afterwards, the Bennaty Winery extended its interest to the wines of the surrounding areas, taking care of their qualitative aspect exclusively. At the present time the company is able to offer its customers a wide range of high-quality wines, which have already encountered favorable reviews and success in Italy and abroad. The Bennati Winery possesses vineyards in the areas of the Soave and the Valpolicella wine production.

The vinification sector of the winery was created especially for the pressing of the withered grapes used to produce the Amarone and the Recioto wines, and for carrying out the "ripasso" operations (fermenting young wine with the skins and lees left over from making Amarone wine).

In order to obtain the best possible qualitative result the fermentino vats have been equipped with special cap-breaking steel bars, with rotating sprinklers to help carry out the pumping over operations and with special air-conditioning pockets used to control the fermentation temperature. The crushing of the grapes is carried out softly in order not to compromise the quality of the product. The control of the fermentation state is carried out every day since it is essential to achieving the final result. This constant monitoring allows us to optimize the timing and the methods of implementation of the rimontaggi (pumping over) operations, the control of the fermentation temperature and the length of the maceration process. The drawing off of the wine is carried out with the help of pumps that completely observe the integrity of the product.

The winery has very characteristic rooms for the aging of wine in wood. These rooms were built in close proximity to the vinification sector so as to ensure the rationalization of some delicate winery operations, such as the fermentation in barriques of some products, for example. The humidity and temperature are kept constant through an automated air conditioning system. Here there are both barriques and barrels. The barrels were intentionally selected of small and medium size in order to obtain the highest qualitative results. The types of wood used were selected to highlight the delicate notes of the wines without altering their typicalness. Thus, results are obtained with a great deal of patience in the mid- and long-term. The barrels are used for the refinement of red wines of great structure, for which the winery has encountered considerable success on many occasions. Both red wines and full-bodied white wines are left to refine in barriques. The fermentation process of some wines that are particularly suited for it is also carried out in barriques. The wines that underwent fermentation in barriques are subsequently left to decant naturally in steel vats, and then poured back in barriques where they stay for a few months on their own yeasts. This elaborate methodology allows us to obtain very special products in which fineness and roundness are enhanced. Continuous monitoring allows us to assess the development of the maturation process of the wines in wood.
