
White wine. Sancerre, Loire Valley, France. Sustainable. 100% Sauvignon Blanc. A single vineyard cuvée produced from vines planted near the estate's cellar. Grown on the pure limestone caillottes, which lend the intensity and a nervy core that Bué is known for. Fermentation takes place both in tank (85%) and barrel (15%), followed by lees aging for 8 months and bottled without filtration. Loaded with ripe honeydew and citrus, the finish is distinctly marked by chalk and wet stone.
