Collection: Domaine de la Borde

Domaine de la Borde is a tiny Jura estate in the appellation of Arbois-Pupillin that makes excellent, high-character wines. Winemaker Julien Mareschel might not have much space to work with, but he certainly makes the most of it.

Three and a half of the domaine's five hectares are dedicated to growing white varieties (Chardonnay and Savagnin), with the remaining hectare and a half going to red (Trousseau, Pinot Noir and Ploussard).

Half of the vines are more than 30 years old, and the other half were planted between 1985 and 1990, and the estate is entirely organic/biodynamic.

A unique terroir, strict hand-harvesting of the grapes, and a meticulous vinification process ensure the wines have a distinct sense of place—not to mention the kind of nuance and head-turning character that adventurous palates are always searching for.

  • Domaine de la Borde Savagnin Ouille 'Foudre a Canon' Nature 2015

    White wine. Arbois Pupillin, Jura, France. Biodynamic. 100% Savagnin. "The 2015 Arbois Pupillin Savagnin Ouillé Foudre A Canon Nature was exceptionally bottled after only 12 months in foudre (it's normally a lot more), as Julien Mareschal thought the wine was ready and tasted good after that amount of time. Additionally, acidity was not very high, so he decided to bottle it earlier than in other vintages. The Savagnin is made in the same way as Chardonnay, partially destemmed (50%) and fermented with natural yeasts in foudre where the wine ages. The soils here are gray and blue marls soils from Lias and schiste carton, a kind of soft slate that breaks like cardboard. The wine has a smoky, flinty note in the nose and beautiful aromas of tangerine peel and a vibrant palate, with some salty notes in the aftertaste. Mareschal has two hectares of Savagnin, so depending on the vintage, if he makes a sur voile Savagnin or not, quantities vary. 2015 was a short vintage, and he didn't make any oxidative wine that year, so 3,000 bottles were filled in September 2017." — 90 Points, Luis Gutierrez, The Wine Advocate #234 (Dec. 2017)

"The 2016 Arbois Pupillin Terre du Lias is produced with Chardonnay from the Sous la Roche and another adjacent parcel, all on the same soils, which now name the cuvée. The bunches are partially destemmed and the juice put to ferment in 600-liter barrels and Stockinger foudres where the wine matured for 12 months. The style of the house is fresh and with good acidity, and Julien Mareschal likes the style of 2016 better than 2015 for the kind of wines he wants to make. He likes good precision in the wines, and he uses a little sulfur, depending on how healthy and how much acidity the vintage has. 5,000 bottles produced. This is the largest cuvée of the domaine. Fermentation using only indigenous yeasts in 600-liter barrels of 3 to 5 vintages-used. Aged in 600L barrels for 12 months. Aromas and flavors of orchard fruits, spice, flowers, and lemon curd. This is a beautiful, medium-bodied wine with rich layers and textures and a lovely minerality that keeps everything fresh and lively. Impeccably balanced and pure.

Hand-harvested, whole-grape pressing, fermented in stainless steel vats, then bottled a few weeks later. Excellent as an aperitif or dessert wine, pairs particularly well with foie gras.

Entirely hand-harvested and entirely destemmed by hand. Fermentation without sulfites and only with indigenous yeasts in 600 liter barrels of 3 to 6 vintages-used. Aged in 600 liter barrels on the lees for 12 months.
