Red wine. Provence, France. Organic. 92% Mourvèdre, 8% Grenache. From a small 1.75 hectare north facing vineyard. The soil in the vineyard is the secret to the wine a unique red clay that helps retain moisture for the vines. Look for flavors of black fruits, nutmeg and other spices, and violets. The grapes are destemmed and the wine is aged in large foudre which allows the flavors of the fruit to shine. This is a wine for rich foods, an ideal pairing would be a classic Provençal lamb daube, or for something a little different, like a Oaxacan black mole.
