Sparkling wine. Champagne, France. Sustainable .100% Pinot Noir. One of the new flagship wines from Maillart, this single vineyard is situated in the town of Bouzy, known for some of the best Pinot Noir in Champagne. The vines are 30+ years old and all the winemaking is done in oak. 2015 was a warm vintage in Champagne and as a result the wines are more opulent. While rich and round, this wine does show its Pinot roots, with flavors skewing more towards light red fruit and apples than citrus. A low dosage keeps means the acidity is present and the wine is balanced and fresh.
