  • Domaine Saladin Côtes-du-Rhône 'Paul' 2015

    Red wine. Southern Rhône, France. 90% Grenache Noir, 10% Clairette. Organic. From the Domaine’s ancestral vineyard, these 50-year-old vines (90% Grenache and 10% Clairette) are co-planted. Vivid ruby. Spice-laced red berry liqueur and floral pastille aromas are complicated by suggestions of garrigue and white pepper. Sweet, seamless and focused, offering lively raspberry and cherry flavors and a suggestion of spicecake. Smoothly combines power and finesse, finishing with very good, spicy persistence and silky, slow-building tannins.

  • Pascal Bonhomme Viré-Clessé Vieilles Vignes 2018

    White wine. Macon, Burgundy, France. Sustainable. 100% Chardonnay. Produced from 60-65 year old vines grown on clay-limestone soils. 20% of the wine is fermented and aged in barrel the rest is done in tank. This is an absolutely stellar wine from an area in burgundy that many people overlook. Very clean and pure on the nose with aromas of lemon, pear, quince, and a hint of wildflower honey. There is a saline edge to the nose as well. On the palate the bright acidity balanced by a hint of wood on the back palate. The wine is super mineral and racy with flavors of quince, pear, citrus on the mid and back palate. Layered under all of that is a touch of pineapple and honey. This finish is long and dry. This would work nicely with a whitefish crudo or sashimi. Skate with beurre Blanc, rissole potatoes and haricots vert would also match well.
