But this wine’s formidable body, glycerol-rich feel, and darkly brooding variations on site-typical mineral and spice – ash, crushed stone, Burley tobacco, peat, chard, black pepper – are decidedly Grüner Veltliner.     White wine. Sancerre, Loire Valley, France. Sustainable. 100% Sauvignon Blanc. 65 year old vines, hand-harvested and fermented and aged on the lees in large oak tronconique. Bottled unfiltered. On the palate, this old vines Sancerre from chalky silt soils is lovely, pure, tight and salty; it has an austerely firm and seriously mineral character, with grip, tension and a persistent terroir expression. Try this with a goat cheese and endive salad, or the classic frisee aux lardon.
