Red wine. Cahors, France. Organic. 100% Malbec. Manual harvesting with complete de-stemming of the grapes. 15-day maceration, followed by fermentation in stainless steel tanks using only indigenous yeasts. Matured 2 years in vats on the lees. This is a medium to full-bodied, supple and elegant Cahors that has nicely integrated acidity, fine tannin and a great finish.
