Red wine. Arbois, Jura, France. Sustainable. 100% Trousseau. Produced from 35-year-old vines planted on red limestone scree soils. The grapes are entirely de-stemmed. Fermentation begins naturally using only indigenous yeasts. Aged 12 months in foudre. Vividly fresh nose exhibits black raspberry, wild herbs and acacia blossom. Full in flavor and subtle in its tannins, this Trousseau is gently crunchy on the palate, with a gamey aspect. Finishes impressively persistent and downright refreshing. Pairs well with lighter red meats particularly where the more exotic spices or spice blends like, cardamom or ras el hanout make an appearance.
