Sparkling wine. Champagne, France. Organic. 80% Chardonnay, 20% Pinot Noir. The Clos Bourmault is a .8 hectare vineyard in Avize. This blanc de blanc is elegant and seductive. The wine was not bottled until 2007, so it had two years of barrel aging before starting the secondary fermentation, and not disgorged until 2018. The second fermentation and aging takes place under cork rather than under crown cap. This results in a wine with great depth of character and structure. Look for flavors of citrus and orchard fruit overlaying brioche. The is beautifully balanced with bright acidity offsetting the rich savory character which comes from barrel aging.
