Red wine. Côte de Nuits, Burgundy, France. Sustainable. 100% Pinot Noir. 90-year-old Pinot Noir vines planted on soils of clay limestone. Extremely low yields, and old vines, paired with whole cluster fermentation make for a concentrated elegant wine. The hallmark Chambolle prettiness is still present with delicate aromas of sweet berries and flowers. On the palate the wine is rich and stylish, mingling black cherries and sweet raspberries, with accents of wild flowers, spice, and minerality. The texture is velvety and balanced by the acidity. Try this with a beef tenderloin, or if you are feeling particularly ambitious a beef wellington.
