
White wine. Arbois Pupillin, Jura, France. Biodynamic. 100% Savagnin. Partially destemmed (50%) and fermented with natural yeasts in foudre where the wine ages. The soils here are gray and blue marls soils from Lias and schiste carton, a kind of soft slate that breaks like cardboard. The wine has a smoky, flinty note in the nose and beautiful aromas of tangerine peel and a vibrant palate, with some salty notes in the aftertaste.
