White wine. Mâconnais, Burgundy, France. Organic. 100% Chardonnay. This exceptional parcel planted in 1922 faces the small Chapelle de Pouilly, just next to the domaine's cellar. Harvest is done manually and the grapes are pressed at low pressure without crushing. The vinification is done in two parts: 25% in new oak barrels, 75% in two-vintage used barrels for 12 months. Batonnage is done without excess oxygen without loss of CO2, once a month after malolactic fermentation. It is best to decant, old or young, to fully express this jewel of Burgundy. Round and elegant this is a wonderful example of the quality wines being made now in Macon. Try with richer poultry dishes or maybe even some fried chicken.
