
White whine. Penedès, Spain. Organic. 100% Xarel-lo. Xarel-lo is an indigenous Spanish grape, best known in Penedès as one of three grapes used to make Cava. It is only within the last 20 years that Xarel-lo has been produced as a varietal wine. The grapes come from 60+ year old vines planted on limestone soils. The grapes are macerated on the skins for several days prior to fermentation to extract the phenols and aromas. After fermentation, the wine is aged on the fine lees for 5 months. Look for aromas of peach, pear, and pineapple on the nose, with some herbaceous elements. On the palate, look for fruit on the front palate with minerality and structure coming through on the mid-and back palate. The finish is long and elegant, with a slight saline hint. Try this wine with assorted seafood dishes, such as paella, or semisoft cheeses.
