
White wine. Sancerre, Loire Valley, France. Sustainable. 100% Sauvignon Blanc. The cuvee Ovide comes from a single vineyard planted near the domain’s cellar. The vineyard was planted in the 50’s and the cuvée takes its name from the surname of the man who planted it. Grown on the pure limestone caillottes, which lend the wines intensity and a nervy core, which Bué is known for, with southwest exposition. Fermentation both in tanks (85%) and in barrels (15%). Wine kept on lees for 8 months and bottled without filtration. Loaded with ripe honeydew and citrus, its finish is almost adamantly marked by chalk and stone. The acidity, minerality, and citrus character of the wine make it a natural pairing with crustaceans and shellfish, particularly preparations with citrus in them.
