White wine. Mâconnais, Burgundy, France. Sustainable. 100% Chardonnay. The vineyards for this wine are located on the eastern slopes of the Roche de Solutré. The soils are limestone based with small stones on the surface and deeper down loam with clay. The vines average 60+ years in age. The older vines will lend the wine greater depth and concentration of flavor. Vinified in cask (1/5 new) and aged over 10 months prior to release. The wine shows a beautiful mineral focus well framed by the barrel regimen. In addition to the mineral character look for yellow orchard fruit, lemon, and green apple. Pair this wine with fish dishes or poultry. It has the body to stand up to fish as rich as swordfish, and most shellfish.
